I am sure you are already drooling on your keyboard at the mere thought of one of these delicious Christmas cookies or you are still wiping the crumbs from your lips after my last recipe, either way prepare yourself for a simple recipe that everybody can mange to follow.
Kourambiethes Walnut butter biscuits Makes about 24 biscuits
250g (8 oz) butter, melted and cooled ½ cup (3 oz) icing sugar 1 teaspoon baking powder 2 cups (8 oz) flour ¼ cup (1 oz) finely chopped walnuts
Preheat the oven to 180C – 350F – Gas Mark 4 Mix the butter, 30 g (1 oz) of the sugar and the baking powder in a large bowl, then gradually add the flour beating constantly. Finally you add the walnuts. With a floured hand, form 1 ½ tablespoons of the dough into round cookie shapes, 1 ½ in – 4 cm in diameter and ½ in – 1.5 cm thick. Place them on the floured baking tray keeping them 1 in. - 2.5 cm apart. Bake them for nearly 15 minutes until they are light brown and firm. Cool them on a cake rack and sprinkle them with the remained icing sugar.
