How can you have Christmas without Christmas cookies? Here is the first recipe for Greek Christmas cookies and we also want you to send us your traditional Christmas recipes!
Melomakarona Honey …shortbread Makes 25-30 cookies
3 cups (12 oz) flour 1 teaspoon baking powder 1 teaspoon bicarbonate of soda (baking soda) 1 cup (8 oz) olive oil ½ cup (4 fl oz) sugar ½ cup (4 fl oz) brandy ¼ cup (2 fl oz) orange juice 1 tablespoon grated orange rind ½ cup (2 oz) chopped walnuts 1 teaspoon cinnamon
And for the syrup 1 cup (10 oz) honey ½ cup (4 oz) sugar 1 cup (8 fl oz) water
Preheat the oven to 180C – 350F – Gas Mark 4 In a bowl, mix flour, baking powder and baking soda together very well. In another bowl, mix oil, sugar, brandy, orange juice and orange rind, and then gradually incorporate it into the flour mix. Do that slowly while mixing and make sure that the dough is easy to knead. Knead it lightly. Roll it out and cut round or oval shapes about 2.5-3 in / 6-8 cm. Place them on the greased baking tray and bake in the preheated oven for 20 minutes, until they become light brown. To make the syrup, mix honey, sugar and water and boil for 5 minutes, then allow it to cool. Dip the cookies in the syrup, place them on a serving plate and sprinkle with the chopped walnuts and cinnamon.
